In his recently defended PhD thesis Dr. Jan van Mechelen suggested a mechanism for chocolate blooming. This phenomenon occurs when chocolate is stored at too high temperatures and poses a huge problem for manufacturers of delicate (and mostly delicious) chocolate products. Clues to this mechanism were revealed by in-situ X-ray diffraction studies using both synchrotron and laboratory radiation sources.
